For the last five months, I've managed to make all the boys' food using Mary Jo's book and other online sources. I love the process of selecting the menu for the week, cooking, blending, freezing, and later selecting among the many bags of brightly colored cubes for each meal.
But as they grow and assert their independence, they're wanting to feed themselves. Let the next phase of baby food begin! They get chunks of bananas, blueberries, pears, avocados, puffs, baby crackers, and cheese, but it was time to actually make some real food.
My first attempt was (almost) vegan pancakes from one of the food blogs I read. The recipe called for almond milk, but since I had all the other ingredients on hand (and am not even remotely vegan), I just went ahead with regular milk.
1 apple1 banana
1/4 c milk
1T flax seed
(blend and set aside)
1/3 c oatmeal
2T wheat flour
1/4 baking powder
1/4c milk
Cinnamon
Vanilla
The flavor was great, but I'm not sure how "pancakey" they were. Not particularly light and fluffy. Or maybe I just can't make proper pancakes. Either way, they met the approval of the only judges that mattered.
Feeding time is a total mess right now, but it sure is fun.
